Ingredients:
For the Chicken:
- 1 whole chicken (about 3-4 pounds)
- 4 slices of ginger
- 2 stalks of green onions (scallions)
- 2-3 cloves of garlic
- Salt, to taste
For the Rice:
- 2 cups jasmine rice
- 4 cups chicken stock (from cooking the chicken)
- 2-3 slices of ginger

- 2-3 red chilies, seeded

- 1-inch piece of ginger
- 1 tablespoon chicken stock

- Soy sauce with sliced green onions and minced garlic
Instructions:
1. Poach the Chicken:
- Rinse the chicken inside and out and remove any excess fat.
- In a large pot, fill with enough water to submerge the chicken. Add the chicken, ginger slices, green onions, garlic, and salt to the pot.
- Bring the water to a boil and then reduce the heat to a simmer. Cook the chicken for about 40-50 minutes, depending on its size, until it's fully cooked.
- Remove the chicken and immediately plunge it into an ice water bath for about 15-20 minutes. This helps to stop the cooking process and keeps the skin firm.
- Once cooled, rub the chicken with a bit of sesame oil to give the skin a nice shine.
2. Cook the Rice:
- Rinse the jasmine rice under cold water until the water runs clear.
- In a separate pot or rice cooker, heat some oil and sauté ginger and garlic until fragrant.
- Add the rinsed rice and stir for a couple of minutes.
- Pour in the chicken stock (from poaching the chicken) and add a pinch of salt.
- Cook the rice as you normally would in your rice cooker or using your preferred method.
3. Prepare the Chili Sauce:
