Making a delicious European canned peach tart is a relatively simple process. This recipe will guide you through creating a delightful dessert. Please note that you can use either a pre-made pie crust or make your own pastry for the tart. Here's a recipe for a European canned peach tart with a homemade pastry crust:

Ingredients:

For the Pastry Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt

For the Peach Filling:

  • 1 can (15 ounces)  European canned peaches in syrup, drained and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract

For the Glaze (Optional):

  • 1/4 cup apricot preserves or peach jam
  • 1 tablespoon water

Instructions:

1. Prepare the Pastry Crust:

  1. In a large bowl, combine the flour, sugar, and salt.
  2. Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the flour mixture until it resembles coarse crumbs.
  3. Gradually add the ice water and mix just until the dough comes together.
  4. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

2. Preheat the Oven: Preheat your oven to 375°F (190°C).

3. Roll Out the Pastry:

  1. On a floured surface, roll out the pastry dough into a circle large enough to line a 9-inch tart pan.
  2. Carefully transfer the dough to the tart pan and press it into the bottom and sides. Trim any excess dough.

4. Prepare the Peach Filling:

  1. In a small bowl, mix the sugar and cornstarch. Sprinkle this mixture over the bottom of the tart crust.
  2. Arrange the sliced canned peaches on top of the sugar mixture.
  3. Drizzle the peaches with vanilla extract.

5. Bake the Tart: Place the tart in the preheated oven and bake for 30-35 minutes, or until the pastry is golden brown and the peaches are tender.

6. Make the Glaze (Optional): While the tart is baking, you can prepare the glaze. In a small saucepan, heat the apricot preserves or peach jam with water over low heat until it becomes a thin, smooth glaze.

7. Finish and Serve:

  1. Once the tart is done, remove it from the oven.
  2. While the tart is still warm, brush the peach slices with the optional glaze for a glossy finish.
  3. Allow the tart to cool before serving.
